Is this all the produce you have?
This is a common question we get at The Market, and it’s one worth providing a bit more context around, rather than just answering with a simple, Yes.
At Hudson Milk + Market, we only carry produce that we can source locally—which means we only carry what’s in season or grown in a greenhouse. Why? Because it’s better for you, better for our farmers, and better for the planet.
Out-of-season produce must be trucked, shipped, or flown in from faraway places. That long journey means it’s not as fresh when it arrives. In many cases, these crops are even bred or genetically modified to withstand travel, sacrificing flavor and nutrition for a longer shelf life.
We believe in choosing quality over convenience, supporting small, independent farms, and offering you produce that’s fresh, flavorful, and as nature intended.
Winter might seem like a limited season for fresh foods, but it actually brings a delicious bounty that can elevate your meals and nourish your body. From hearty root vegetables to crisp apples and creamy dairy, winter foods offer the nutrients your body craves this time of year—while helping to sustain the farmers who grow it.
Here’s what’s in season right now—and how you can make the most of these winter treasures in your kitchen.
What’s in Season Right Now at Hudson Milk + Market?
While we keep our selection small to avoid waste, we still have plenty of fresh, seasonal produce available. Right now, here’s what you’ll find at Hudson Milk + Market:
Root Vegetables:
- Carrots
- Potatoes
- Red beets
- Sweet potatoes
- Jerusalem artichokes
How we enjoy them: Roast them, mash them, or add them to soups for a cozy winter meal.
Leafy Greens (Including Greenhouse-Grown):
- Kale
- Spinach (greenhouse)
- Spring mix (greenhouse)
- Arugula (greenhouse)
- Buttercrunch lettuce (greenhouse)
- Cabbage
- Microgreens
How we use them: Sauté kale for a nutrient-packed side or toss arugula and spring mix into fresh salads. Cabbage is so versatile – make an amazing winter slaw; sauté or stir fry; cabbage soup is a hearty, low cal, nutrient dense meal; and how about roasting it alongside some kielbasa or sausage?
Mushrooms (Locally Sourced):
- White button from Bulich Mushroom Farm in Catskill, NY
- Oyster, Pioppino, Chestnut, or Lion’s Mane from Westchester Mushroom Co (right here in Peekskill, NY!)
How we use them: Sauté with garlic for an easy side dish, or add them to soups, stews, and stir-fries.
Winter Squash:
- Delicata squash
- Butternut squash
How to use them: Slice and roast the delicata with some EVOO, sea salt & pepper for an easy and delish side dish. Or, elevate it with some of Jodi’s Kitchen seasoning salts! Butternut soup anyone? Warms the soul!
Other Seasonal Highlights:
- Cranberries (perfect for sauces and baked goods)
- Onions & shallots (essential for winter cooking)
Did You Know?
The produce we carry reflects what’s available in our local region. If you don’t see something you’d like, let us know! We love getting suggestions. If we can find it locally, we’ll give it a try—just like we did with Brussels sprouts (which, surprisingly, didn’t sell as expected!).
Reminder on why we choose seasonal produce:
Eating seasonally isn’t just about flavor—it’s a decision that benefits your health, our local community, and the environment. Here’s why we stick to seasonal produce:
🥗 Better Flavor & Nutrition
Seasonal produce is harvested at peak ripeness, meaning it has better flavor and more nutrients than out-of-season produce that travels long distances. Our farms are all located right here in the Hudson Valley region and come to us within a few days of harvest.
🚜 Supports Local Farmers
When you buy seasonal, local produce, you’re directly supporting small, independent farms in our community. Your purchase helps keep local agriculture alive, ensuring future generations can continue farming in the Hudson Valley.
🌎 Better for the Planet
Choosing locally grown, seasonal foods reduces the carbon emissions associated with transporting produce across the country—or even the globe. Fewer food miles mean fresher food for you and less pollution for the planet.
🧑⚕️ Naturally Supports Your Body’s Needs
Winter produce like kale, sweet potatoes, and mushrooms provides essential vitamins, fiber, and antioxidants that your body naturally craves during colder months.
